Italian Luncheon Cakes******************

These are excellent for lunch or dînner and may be garnished with red yellow tomato slices.

2 cups commercial biscuit baking mix.

1/3 cup sharp cheddar cheese.

1/3 cup parmesan cheese.

2 teaspoons chopped fresh parsley.

2 teaspoons fresh basil.

1/2 cup diced red pepper.

1/2 cup diced green pepper.

1/2 cup chopped green onion.

1/2 cup diced cooked panchetta.

1/4 cup de tomato sauce.

1 cup half and half cream mixed with.

1 teaspoon balsamic vinegar.

2 eggs.

bel paese cheese or bier.

1.- In large bowl,combine baking mix cheeses,herbs,red and green pepper,green onion,and panchetta.

2.-In a separate bowl,stir together tomato sauce cream and eggs,stir egg mixture into mix vegetable mixture until evenly moistened.

3.-Preheat perfect pancake pan on a medium heat,pour 1/3 cup batter into pan and cook 1 minute on first and 11/2 minutes on second side.

4.- Serve hot with bel paese cheese and warm extra tomato sauce.
